I am traveling to Cambodia in the beginning of June for 10 days. My mom is coming with me on this trip so the pressure is on haha!! I want to plan a memorable trip for her, and since she is coming with me, I want to plan something for her that is less tourist-y.

So far, I am planning to go from Phnom Penh - Kampot - Koh Rong. Is there a rural village with homestay somewhere on this route? I really want to show her places that she would never been able to go by herself.

Thanks so much in advance.

Ps. Is there another island I should look into instead of Koh Rong?

You might want to consider Meas family homestay: http://cambodianhomestay.com. It's close to Ang Tasaom which is on the road to Kampot from Phnom Penh. Haven't stayed there myself but heard several positive reports about it.

If you want a less touristy island then look at Koh ta Kiev instead of Koh Rong.
I haven't been to Koh Rong for a couple of years but from reports I've heard from others the beach has lots of bars now and the beach cleanliness is suffering.
Koh ta Kiev is much quieter and laid back. There are jungle walks you can do and a fishing village you can walk to for lunch....the local families will serve you up whatever they have available from their catch for a small cost.
Some of the places are be closed for low season now but Ten103 and The Last Point are both still open and both have daily boats leaving from Otres 1 Beach.
