Depends on what you want to pay for a guest house--the cheaper ones are usually cash only.

I recently stayed there, they have top end accommodation from $60 a night to the low end for $5 a night, which was a tent pitched on the beach. I pre booked my accommodation, the island is not very big a walk along the foreshore to find accommodation may take 20-30 minutes. Even if you want to book for one night then maybe the next day take a stroll and enquire.

I didn't get to any other islands on my trip, Koh Rong is the party island, Koh Rong Samloem was very quiet, there was one 'bar' near the main pier.
