obviously, to visit angkor wat and the other amazing temples, you want to stay in siem reap. with one week in cambodia, you can easily spend the whole week in the "angkor area". or you could spend a couple of days in siem reap (at least 3 days in my opinion), and then spend a few days in phnom penh. or in battambang, or on a beach. it depends on your interests of course.

vegetables and fruit?

although it may not be the most exciting of cuisines vegetarian food is easily available. If you eat fish there is often fish to be had and if you eat cheese then baggettes with "laughing cow" cheese can be found in the bigger cities (and if going off the beaten track you can buy at the supermarket)
