I think you should cycle 3 days around the Angkor Wat and countryside of Siem Reap and 4 days left using Tuk tuk to tour the city.

I arrive in Siem Reap Sunday July 26th, departing Sunday 2nd August.
I will go to Angkor at 17u00 and return Monday for sunrise. If I stay until mid afternoon it will make for a very
long day, so tuesday I will go to tonle sap for the day.
Wednesday back to Angkor.
Thursday I do the Angkor Vespa tour from 8u00 to 17u30
Friday perhaps a cycle tour around Siem Reap or a day out to kulen mountain.
Saturday, Banteay Srei.
