You just had ThaiPusan festival,the temple is 5mins walk from your ClarkQuey - how did you like it?Have you made a lot of pictures?
There is nice walk from ClarkQuey to Zouk Club complex:
you have to cross pedestrian bridge on the way through some back alleys,try to find it,Zouk is
great club,in Clark - try Crazy Elephant.For food go to food center in ION - big and civilised,if you are adventurous - walk to TiongBahru and try food there in local hawkers center,TiongBahru is traditional chinese enclave,you may like place there where they display cageswith singing birds?;
Easy to find for you is foodcenter in the basement of Novotel Hotel(yours hotel?) or opposite on the other side of river.Plenty of choices - did you find PeoplesPark?
You should take ride by MRT to one of residential HDB centers,for instance - go to ToaPayo or AngMoKio and you will see how local people live,you can eat there,make shopping(low prices).
On sunday they have concerts in Botanical Garden in afternoon - beautiful event,Bot.Garden - must place to see,as well as Zoo,BirdPark,Sentoza.
EastCoast Park with beach is nice for afternoon,river trip by boat- very easy for you?
you will not have enough time to try half of it.

Octotapas the tapas bar in Clarke Quay is fantastic- great food and sangria
Brewerks- Also has fantastic beers on tap and a great spot to sit out in the sun and have some snacks
There's also a really nice Moroccan place in the middle of all the restaurants at CQ near the water fountain.

Sorry none of these are really Singaporean (normally I just go to a hawker centre)

For something to do go to the Asian Civilisations Museum sometimes on a Saturday night it will open and have free entry and entertainment. It's a fun thing to do if you don't feel like hitting the bars and clubs (or before you hit the bars and clubs)

I just got back from Sg recently and visited most of the major tourist attractions. Check out my blog below for some pics and write-ups.

As for food, I would recommend going to Chinatown instead. Lots of hawkers stalls there at Makan Street. Chinatown is just one MRT station away from Clarke Quay.

For something more comfortable, I LOVED the food court in Marina Bay Sands. Lots of different cuisine to choose from!

I think you could also try Lau Pat Sa or Singapore Food Trail located at Boat Quay, easily accessible from Clarke Quay and you could have a good taste there
