Arriving at Singapore Airport at 6.40am Thursday 24 Dec - no checked in baggage, could I get to Lavender Street bus station for an 8am departure? MRT or taxi??

if your plane is on time, it takes you 30mins by MRT to get from Changi Airport to Lavender MRT and then a 10 mins walk to the bus station. The main concern is if you have sorted out your bus ticket beforehand..

How frenetic are the buses and bookings around Xmas day - do things go crazy with people travelling or is it just another day over there?
I was also thinking of using the Citiexchange bus company from Kovan Hub....dep 8am (seems to be a bit closer to the airport - for a taxi) ride??, then I saw that Konsortium departs from Golden Mile Tower at 8.30am - giving me an extra half hour but strangely there are no bookings on their 8.30am departure where other bus companies have half full buses?? - Is Konsortium still running?? Are they an ok company.

I would say that you are running a little tight if you want to take the 8am bus.
Like Westwood suggested, you can go to Johor. In this case take the MRT to Bugis station and then it's a 10 minute walk to the Singapore-Johor Express and Causeway Link bus station. These express buses will take you to Larkin bus terminal in Johor and run about every 10-15 mins. Once you arrive at Larkin, if you are going to Kuala Lumpur, there will be plenty of buses leaving half hourly/hourly. There are also buses for other destinations such as Malacca, Muar, Mersing, etc. As usual, always buy the ticket from bus counters and not from the touts. Since you are arriving on Xmas Eve, there is a possibility that bus tickets might be sold out and you have to wait a while to get on the next available bus.
Konsortium is one of the many companies that run trips to Malaysia and yes they are ok and still operating. You can book online at www.konsortium.com.sg. There are other companies such as Transtar (www.transtar.com.sg), Grassland (www.grassland.com.sg) where you can book tickets online. Also for Transtar I believe they may have a bus that leaves directly from Lavendar MRT station (one stop before Bugis station) Frankly I have never booked online with them (I always buy my tickets from their office) and so have nothing to share on whether it is reliable or trouble free.
