We've got a two night stopover in Singapore in early Jan '09 and was after some suggestions. A nice hotel in a central area? Things to do to fill in a couple of days? I've heard the zoo is a must but we'll be returning from an African safari, is it still worth checking out?

In Singapore, I eat and buy books.
Breakfast- bakpao, dumplings and coffee (or toast and kaya at a Chinatown cafe). lunch at a hawker centre somewhere like Lau Pa Sat or Newton Circus or out towards Marina. Dinner- Singapore chili crab out on the East Coast parkway or at a more expensive place at Clarke or Boat Quay. Or hit Little India with it's myriad eateries.
Books at Border's on Wheelock Place off Orchard Road or....that one near Chijmes that I can't remember the name of!
i don't care what others say- High Tea at Raffles at least once is worth it.
I also don't care what others say- the aquarium and Fort Siloso on Sentosa Island are worth a look.
I suppose the zoo will still be OK for non-african animals?

Its an eat, eat, eat, eat and drink and eat somemore place over there.
Comparing Singapore with other countries, every void deck of a HDB block of flats has got an eatery downstairs.
If you don't want the zoo, or the bird park, do like what I did...
On one of my trips to Singapore, a long time back now, I spent a whole week, yes, 7 days and nights, just using the stored value MRT card to go on the whole of the network, and use the buses.
I did not use a map, I just dared myself to catch any bus that came along from Orchard Road, going up out of the city centre.
Just followed the bus till I saw an MRT station, or what looked like one, hopped off and then catch the train, get off when I saw a HDB block with visible shops and eateries on the void deck, and got another bus.
Public transport is easy to use over there.
MRT is very good, as are the air cond buses, and the taxi drivers don't tend to scam you that much, apart from them using their "going off shift" routine.
But once you get into their cab, they use the meter.
If you have not been there before, its a pretty weather hot place. Humid too.
You don't say what your hotel budget is, but a couple of weeks ago, we stayed at Raffles The Plazza (part of the Fairmont Hotel). We took a room on the club level (floor 22), fantastic room with a balcony and just AWSOME views. A bit of a splurge, I know,(450S$ per night), but absolutely unforgettable. Highly recommended!!!!
And things to do......loads...The Night Safari, The Singapore Flyer, The DHL Balloon, Cable Car to Sentosa, Carlsberg Sky Tower, Singapore Sling at Raffles Long Bar, wander around Little India, Arab Street area or Chinatown. And of course eat!!!
There's loads to do In Singapore. We loved it!!!!!

The zoo is world class and I enjoyed the Night Safari at the zoo (requires a special ticket and like the name says, it's only at night), but I wonder if any zoo might seem to be a letdown after a safari.
I thought the National Museum of Singapore was great. I'd think any city or country would be proud to have such a well designed museum to show off its history.
Singapore has a lot of shopping malls. I have unfortunately forgotten the name of it, but if you're into music or movies, there's a local store that has several branches that has a very good selection of movies and music. You can get your movies on DVD or VCD. Neither are expensive. I have also forgotten the name of it, but one mall specializes in electronics and computer equipment. Don't expect any bargains on any electronics goods, but the selection is quite good.

central accommodation? Everywhere is central. I stayed at farrer park last time (Little India) because the family house was full.

Orchid gardens, Hawker Stalls, Zoo or Night Safari, in fact have a breakfast at the zoo. shopping.

If you want to splash out the Carlton Hotel (opposite Raffles) is really nice. As everyone else has said the Zoo is great, as is Chinatown markets, Little India. Sentosa Island is ok but I wouldnt put it on the top of my list.
Wining and dining at Clarke Quay is good, but pricey!
