If London have Tower of London,Paris have Eiffel Tower or Bangkok have old temple, these are probably so called landmark of the city, Does Manila have something like this?

Try Luneta Park.

I think it would be Intramuros. It was the old Spanish settlement in Manila. It is also known as the "Walled City" because the entire settlement was fortified. The Rizal Monument in Luneta Park? Probably but I am not sure because its not that massive or impressive.

Closest thing to a symbolic landmark defining Manila would be... any SM mall.

The city was pretty much flattened in WW2, closest thing to historic buildings left would be the walls of Intramuros and a few somewhat moth-eaten churches and colonial-era government buildings.
