i stayed at Yukjijangsa which is not far from Seoul. I haven't visited other ones near Seoul (only further afield) to compare.
It is a small temple and quiet.
they didn't make us stick to any strict schedule, maybe because we were the only guests there.
I really enjoyed the peace and quiet, while also fitting in some meditation and prayer.
The monks there were great.
depending on the temple or monk they may be strict in regard to how you should do things or more relaxed.
My time in Yukjijangsa and Naksansa were very relaxed, not strict at all, and very enjoyable.

ended up doing a two day stay at Yukjijangsa. i tagged on to the three day fasting/detox programme and had a great time. they dont answer their emails so its best to call or get your hostel to call them in advance to arrange the transfer from the bus stop. to get there you take the subway and bus and it takes about 90 minutes altogether from central seoul.

i would say that if you have bad knees then the 108 bows to buddha may not be very pleasurable!!!!!
