I was in Pusan exactly 40 years ago tomorrow December 6..

While there I ate at an outdoor eatery in a market area near the port that was a table next to a 45 gallon drum in which they boiled a whole pig carcass over an open fire. They cooked rice on a fire too.

You got a big bowl of rice filled with pork broth served with huge chunks of meat cut off the pig which they hoisted it out with a come-along chain lift mechanism. Everything was served with tons of fresh garlic and kimchi.

I guess you can't find anything like that there now.

You won't find that today, 40 years later.
The food market is impressive though, both in markets and at restaurants. Kimchi as a side dish is still standard.
In the meantime, the transliteration has been changed to Busan.
