I am planning a round trip tour from Seoul, South Korea to New Zealand in the end of November. I am finding big differences in airlines and was looking for some advice from anyone who has taken this route as to the best airline to fly, or perhaps a suggested route which would save some money? Carrier-specific offers and TAX+fuel surcharge level change all the time, therefore 'the best carrier' last month does not necessarily become the best option for you (price-wise) when you fly out in November. Moreover, duration of stay, refund/reschedule restrictions, available sub-booking class (within Economy class) all add up to the significant variation in airfare. (I'm already assuming you'll EXCLUDE direct flights due to their higher fares)
If you have a basic command of Korean or can utilise such help, check on-line based agencies such as whypaymore.co.kr or Interpark or Onlinetour.co.kr, and mind the conditions attached. Top Travel, an off-line giant, used to give good quotes on-line as well but it's not guaranteed. Getting a cheap flight ticket is a labour-intensive job to pull off.
