I plan to go to Mongolia for a break early next september. I have planned on 8 days as I am in a rush to return home. However I have started looking into it and I think I may be being way over ambitios trying to do some justice to Mongolia in 8 days. What do you thin, is it just not enough time or can it be done?
Also what are the areas I shoudl absolutely visit, Ulaan Bator is obviously already on the Itinerary!

Depends upon your interests. With 8 days you can see some of UB and go to the Gobi desert or Lake Khovsgul, but if you are interested in going to Western Mongolia you would need more time.

You need to figure how much money you have, how much time you have and your interests. I suggest reading the LP's online destination guide and websites of agencies based in Mongolia to get an idea of what areas there are.

Most people would say that the Gobi is a definite. Beyond that it will depend upon your time, your interests and your pocketbook.
