Hi there,
In a few days time my bf and I will be travelling from Erlian to Ulan Bator by train.

Are there any places worth stopping before we reach UB?

Transport is supposed to be difficult, so we're thinking we might as well stop somewhere on the way.
Another consideration is that we will have spent a long time on the way, so it'll be nice to break it up.

We speak Chinese and imagine that Chinese will be spoken sporadically, since there's been such a big influx of Chinese. Is this right?

Chinese language ability won't help you that much in Mongolia. Not really any place worth stopping. Only stop of any size is Sainshand and word is that there's not a lot of tourist infrastructure there, nor much to see. I'd just suck it up and get all the way to UB.

Mongolians won't like it if you try to speak Chinese with them. This will leave a bitter taste in their mouth and you can get out of the good graces of Mongolians very fast. Except for obviously people from Inner Mongolia and businessmen, they won't know how to speak it, too. Use English.
