How easy is it to apply for a Chinese visa while in Mongolia? How long should I expect it to take. I have a U.S. passport.

I don't see that this should be a problem. Generally, obtaining a Chinese visa takes 5-7 days although sometimes less time if you are willing to pay more money.

Requesting visas in Mongolia is usually discouraged. Furthermore, Chinese embassies regularly refuse to issue visas to U.S. citizens unless you can show that you have residency in the country; people just passing through need not apply. What would prevent you from applying for the visa in the U.S.?
