Ps: waking up early won't be a problem. Colombo isn't really a city to walk in the streets late at night (as far as we know).
Don't book anything until you get to the place....... When you get south, book there...... Guaranteed you can book for the next day when you get there, plus it might give a you a bit of a chance to talk to someone who says yes or no to a tour...

Yes you better book a boat in advance since this is the season and lot of people tend to go for whale watching.
White water rafting is a relatively new thing to Sri Lanka. I have heard about only two places where we can do white water rafting.
