Yes, 3 months is plenty, I'm thinking 7/8 weeks single entry (before going to Thailand via air).
I will be arriving into KTM and spending a week there first, then heading to Pokhara, followed by Chitwan before going south to India. Could I apply for my Indian visa as soon as I arrive in KTM, and pick up up a week later, before I leave?

Sure - assuming that is the week you spend in KTM. The process generally is:

Visit 1: In the morning submit your completed application form, with the 2" x 2" photograph (have 2 just in case), your passport, a copy of your passport, a copy of your Nepali Visa, and a copy of any previous Indian Visa. Pay the fee, get a receipt and do not lose it.

Visit 2: Five working days later, in the morning. Take your passport, your visa fee reciept, and confirm which visa duration and number of entries you have applied for.

Vist 3: The next working day, late in the afternoon you can collect your passport with the visa, and hand back the reciept for your visa fee.

The only downside to this is that the 'countdown' clock on the Indian visa commences on date of issue, not date of entry, so you will 'burn' a couple of weeks - but if you only need 7-8 and get 14 then I see no problem.

I think I'm going to be arriving mid-week, either a Wednesday or a Thursday but I'll pop along to the visa place (Indian embassy?)first thing the next day. Then do my thing in KTM and pick it up those 5 days later, or whenever it's ready, before moving on.
Yes, I'll probably burn a few weeks travelling round the rest of Nepal but I won't need all the weeks for India luckily.
You don't happen to know how much a Nepalese Visa is, or the Indian one? You seem to know a lot, I like you :)

Not the embassy. I gave you the link above - it is adjacent to the embassy but a separate building.

A visa valid for 15/30/90 days costs US$25/40/100. Do take $US it makes life easier; but they will take GBP / Euro other major currencies.

or the Indian one?

If you are a UK citizen, budget for 17,000 NR, + 500 NR service fee.

I shall have a look at the link now, sorry I hadn't opened it before.
Yes I shall take both USD and GBP with me to be safe and will change my money whilst out there as I go.
Wow, the Indian visa isn't cheap haha!

According to most websites Indian Visa for British citizens costs no more than 100 pounds. I don't know where you got that numbers from. http://www.immihelp.com/nri/indiavisa/india-tourist-visa-fee.html

It seems that in Nepal they only issue 1 year Visa which is way too long for you. Apply for a Visa in your own contry and you will pay half as much. You don't need one year Visa. Do you?
