Everything's set and I'm leaving this Sunday via Urumqi to Bishkek. Is the exchange rate better at the airport, or is it similar at money exchangers in Bishkek? Is it easy to change money outside Bishkek?

Better change in Bishkek.
City ~47
Airport ~45 (guess as I never do that)
Change enough money that you can reach other Cities like Kara-Kol or Osh. Smaller places are unreliable and can be a bit time consuming.

There's no reason to change all your money at an airport anywhere. Change enough to get into town and buy food. Then change more in town. There are exchange offices every 23 metres in Bishkek.

Advise to take money from ATM at airport Manas. ATM give also soms. Be careful, because not all ATM give money for VISA or Mastercard. More choices with VISA. ATM in Cholpon Ata, Bishkek, Tokmak, Airport Manas, Och. For Mastercard, only KazKommerz bank ATM works. Most of ATM give a max of 200_USD or 8000 soms.
Today 1USD=47.7
1Euro=67.5soms
