Florida is filled with super weird places to see. Try Whimzeyland in Safety Harbor. Though that's practically in Clearwater.

Thanks. I will have a 3 month old baby with me so will be stopping a couple of times on the way so looking for places before we reach Clearwater.

That's a two hour drive, through pretty much nothing of interest. The baby can sleep that long.

I don’t want to leave my baby in a car seat for two hours. It is not recommended and it would be good to stop off st some other small towns on the way.

Up to two hours in the seat is fine for a baby.
I think you're overestimating the distance, and underestimating the dearth of places along the way. The "small towns along the way" is really just nondescript sprawl.
If you really, really, feel the need to stop, find a mall in Lakeland and take a walk.
Believe what others have said. It's a 2-hour drive. What isn't the sprawl of Orlando and Clearwater is swamp and palmetto scrub.

Although I've haven't been to either, Legoland and Bok Tower Gardens are south of Haines City on US-27. When you drive past Exit 58 on I-4, wave to me.

I used to live near Clearwater and drove to Orlando. It is a relatively short drive- less than two hours. Tampa is so close that it doesn't make sense to stop there. About half way is Dinosaur World, but if you feel like you need a butt break or carseat break you are probably better off just taking 10 minutes and getting a snack at a store, flea market or farmer's market. When I traveled with infants/small children would usually break every three hours.
