Combine all ingredients except sugar with ice in shaker or blender, put in glass and then add bitters.
The more you repeat, the more you enjoy!

PISCO is a quechua word, which is almost, perfctly, totally, undeniably, almost irrefutable that it means PERU. Since the Cuzco EMpire reached Chile, Argentina the actual PAcific Islands it 's worth doing the remark.
PISCO is a valley that's been signaled since the pre-Inca times; this valley is the actual port of PISCO in Peru, nowhere else.
PISCO was first traded to the US (San Francisco, California) at around 1800, where it became know as PISCO PUNCH. laTER an american who owned a bar in Lima, actually in the Jirón de la Unión ( near tyhe Plaza San Martin ), craete the PISCO SOUR.
In case you might not know,there's a PISCO valley in Chile founded about 50 years ago by the government on the idea of a chilean trader that came from Peru and (in one way or the other) convinced the government to name the valley as PIsco. I guess not even the people there claim or dare to claim the origin of the PISCO, but there's alway sthe more convinced or should I say brainwashed one sthat might believ ethey live in the land of PISCO, the fools on the valley I'd say.

| rideit01:21 UTC17 Jun 2007 | The Valley is called Elqui de Pisco, and there is a major commercial Pisco manufacturer there. It is a charming valley, but the pisco is shyte. It should tell you all that you need to know that Chileans never drink there Pisco 'neat' or 'Puro', whereas any good Peruvian prefers Peruvian Pisco that way!
