Salta to La Quiaca is paved and takes 7-8hrs. Take a night bus and you can be across the border nice and early. This route passes the Quebrada de Huamahuaca which is beautiful, you could easily spend a few days in the area. From Villazon (the Bolivian side of the border) to Potosi is a similar length of time (though road unpaved), plenty of buses, money changing at Villazon not a problem. Potosi is a beautiful old colonial town with plenty of history and you can do mine visits if you fancy. Loads of buses or collectivo taxis from Potosi to Sucre (3-4 hours, paved). Usual stopover would be Tupiza, 2 hours from the border, nice little town with great scenery for walking and horse riding nearby (not sure about farms though, havent heard of any, and no ATM as yet). Main reason to stop here would be to start the 4 day jeep trips that go through to Uyuni via the SW circuit and Salar, one of the most spectacular trips you can do in S America.
