I get in to Lima airport at 19:15 on 30th November then don't fly out to Cusco until 03:45 so I have 8.5 hours to kill. I expect I'll be pretty shattered from the flight from Amsterdam, but I've never been to South America so I'd like, maybe, to make the most of it. Is there anything to do at the airport? Anything nearby?
Had it been daytime, you could go to the city for a couple of hours, but considering it's late when you arrive and the airport being quite a bit off the city, you might better stay in, have a drink and wait for your flight to Cuzco.

At that time, perhaps head into Miraflores or Barranco and grab a bite to eat and have a few beers. Lima has some extraordinary food and you could definitely get something good. But apart from that, the airport has some expensive bars/eateries and the usual starbucks/maccas collection of eateries. Theres not much else there.
There's nothing to do at the airport or nearby. As above, you can take a taxi to Miraflores or Barranca neighborhoods, get a good meal, and see the Pacific ocean waves crashing far below the clifftop viewpoints. I can't think of any other ideas for Lima at night. The historic area is closed down and deserted; it's a bit unsafe at night.
The traffic is terrible at night and it's kinda dangerous so it would be better if you just stayed in the airport

Quick tour of the basic attractions of downtown Lima:
Grab a taxi to Plaza Mayor in central Lima. Take a look at the president's palace and the cathedral. It is safe, even after midnight, there is lots of law enforcement around.
Around the Plaza Mayor there's plenty of restaurants in a few pedestrian side streets. Not cheap, but not too bad either. Steaks, pizza or peruvian food... make your choice. :-)
Walk to Plaza San Martin and drink Pisco Sour at the bar of Hotel Bolivar.Take a taxi back to the airport.
