It seems to be run by a company but I notice they didn't include the price which makes me a little suspicious . The itinerary looks good but I think it would be quite expensive...

I had a look at Outerland Expeditions web page. They don't include the price for the tour they suggested, but for daytrips they charge this per person (if you are two):

Otavalo $60

Quilotoa $80

Mindo $145

So, the 7d/6n tour they suggested is probably quite expensive.

If I do the calculations right you will arrive to Latacunga on a Wednesday and leave for Baños on a Thursday. Thursdays are market day in Saquisili so you could take a taxi there from Latagunga early in the morning. Take a taxi to Saquisili Thursday morning (at dawn) to see the animal market. Have breakfast in Saquisili, return to your hotel in Latacunga to pick up your luggage and take a bus to Baños.

it would be worth it if you want to see the animal market at Saquisili and even visit the other market there for a few hours for both markets as the trip from Latacunga to Banos is only a couple of hours if that...

Well it all depends on how much you want to see some authentic Ecuador or spend more time in touristy Banos really... I have done both but enjoyed the authentic stuff more than Banos although given family Ecuadorian contacts I did enjoy some time in Banos mixing with people the tourists in Banos didn't mix with.....
