The animal market in Zumbahua looks tinny compared to the ones in Saquisili and Otavalo but I think I might try and get to that market when I go to live in Ecuador as I love animals markets and When we get our finca we will need some animals to stock up on it

If you like markets and cultural stuff yet but if you like nature and mountains no... Seriously think about a return visit of at least two weeks and more if you want to include Galapagos which is worth seeing before it is too late....
Me I would skip Cotapaxi and view it front the distance given the choice as I love watching people from other cultures go about their daily lives so find miarkets and wandering through various towns and villages in other countries and communicating when I can rather fascinating ... I have seen Cotapaxi from a distance numerous times but feel it can wait as at the moment I am more interested in the lives of the locals who live in the Sierra and other parts of Ecuador... Must be the anthropologist in me as I did study it at Uni..LOL

Well we did with Ecuadorean friends in their 4WD setting off from Quito early in the morning and retuning later that evening. We spent about an hour at the animal market in Saquisli and about an hour browsing around the other market and then wandered around the town for a bit , had an early lunch the drove via the other towns up to the Quilitoa Crater. We spend an hour or so there and then drove back stopping off at other little towns for a bit a wander around before returning to Quito for a late meal. I can help you regarding buses but buses to Baños are frequent so you won't waste too much time waiting for one. There are buses to Quilitoa etc but unsure of when they leave etc. if you google Quilitoa Loop you will find others have set out how they got around and if I remember correctly Snowflake wrote an excellent report on it as did a few others setting out bus and truck times from the various towns and the walks they did and places they stayed over a few days.
It really all depends on which days you arrive and leave Ecuador too. You will need to structure your trip around those days.

Do as search on Quilitoa Loop and read the posts and you should find out about buses and hikes etc which several posters of all ages have done. snowflake has some excellent posts about it as she has done it several times.
