Our tour operator is taking us for a city tour on one day. The next.day we have the option of taking a cattle ranch tour. We are thinking of opting out and exploring on our own. Any ideas what we can do ?

You could just hang out in Palermo and explore the city's hippest neighborhood, and see how the cool Argentineans live. There you can go to Plaza italia and visit the botanical gardens to see a a public park controlled by stray cats.
But the surest one day itinerary from Buenos Aires is take a train to Tigre and spend hours going around all the waterways there by boat. The Tigre area is quite beautiful.
