You will always find somewhere to stay but it might take some time and energy. and not be your first choice. If you do just turn up, check with the tourist office as they often have lists of available places and will phone for you. Why not phone a couple of days ahead to check a few places for availability? You should know where you are going a couple of days ahead.

BA should be okay.
El Calafate will be a real risk anytime in the summer.
Mendoza especially booked for the 4 day weekend of February 13 to 17 (busy anywhere outside BA) , and from late February until March 10 (Vendemia Festival).
Femby's suggestion about phoning a few days before is a good idea if you want to maintain flexibility.
