I want to climb Aconcagua with a company (guide, porters).

- Do I make a booking over the internet? (so I'm assured I have a guide)
- Or can I just show up in Mendoza? (probably cheaper and the advantage of having a local guide)

Of course I want to climb the mountain in the climbing-season (probably january)

January is right in the high season so you'll probably have to book over the internet and well in advance (unless youre going to be in Mendoza several weeks before). Agencies get full early for that time, as a lot of Europe/US climbing tour operators block book their groups in well in advance. Shouldnt be a problem booking direct via internet with agencies in Mendoza, most of the guides are I think local as have to have Argentine guide licenses (though I think if you already have a recognised guiding license from another country you can lead groups).
