We are flying into Mexico City and do not want to rent a car to get to Valle de Bravo. Obviously could take a taxi but was wondering if Uber would drive us that far from Mexico City?

Well sure - for taxi or uber count on paying the round trip fare. https://tinyurl.com/ya6doy5x You could also contract a private car. Better to have some Spanish to negotiate with driver.
Google all this info in español using a translation program. https://www.suntransfers.com/es/aeropuerto-de-ciudad-de-mexico-a-valle-de-bravo Its 150 km airport to Valle de Bravo.
There is a regular bus https://www.autobusesmexico.com/autobus/ciudad-de-mexico-terminal-poniente-valle-de-bravo
When are you traveling? Going by bus can be a long journey. I don't know if there's direct service from the Observatorio bus station in Mexico City. I've always made the trip by personal car. Certainly a taxi or Uber driver would take you, someone of them would take you, but it'll be an expensive trip because they'll have to head back to the city empty. As I write this I can't see the message @1, above ... but when it's cleared by the moderators she may have given you better information. A great destination, though. But bring warm clothing during Winter months.

Heading there at the end of December—hoping to have the opportunity to see the butterfly reserve.
What's the purpose of your trip? Primarily to visit the Monarch reserves? If so, arranging to be part of one of the many tours that focus on that might work better for you. There are groups that start in Mexico City, others start in Morelia. Even with a car, attempting to do this independently ... I don't think this is a 1 day venture.
Are you staying in Mexico City for a day or days prior to heading to Valle de Bravo? In a hotel? Many hotels have private cars/drivers who offer transport to various tourist and other sites or destinations.
Autobuses Zinacantepec provides direct bus service from the city's Poniente (western) bus terminal throughout the day. The first bus departs 5:40 and the last at 20:15. Travel time is about 4.5 hours. But, the bus company website suggests it offers a few express busses reducing travel time to maybe 2.5 hours. You'll have to check for yourself at the link, below.

In Valle de Bravo your hotel can probably direct you to a tour guide for a visit to the Monarch's.

I just checked and Uber quoted from 1200 to 1600 MXN for a one way trip from Mexico City to Valle de Bravo.
I've seen one day trips to the monarch butterfly reserves from Mexico City advertised at 750 MXN.
