OK, that Maize Improvement Center I was talking about is about 45 minutes east of Mexico City, near Texcoco in Estado de Mexico (not in Veracruz).

I don't know if this would be helpful, but there'a w world-wide organization of organic farmers (WOOF ??) that take apprentices etcs. There are anumber listed for Mexico. It might be helpful to make contact with some of those farmers and see if they have any suggestions. Also, you might contact universities if you have a speciality that they might need.

Thank you all for your replies! My hair was blown back by the number of responses! I wanted to reply to some of them specifically: I contacted the Peace Corps a while back, and they can't take folks with children, because of insurance liability etc, and I have one, so that is out, but something lots of folks have mentioned, and I thank you. In regards to the hort degree, it's not just a glorified gardener, I've had classes across the spectrum and in the field, from landscape design and irrigation to IPM and tissue culture. And I do have experience: years working on organic farms in all facets from planning and growing to selling, and owning my own landscape design/build/maint business for three years, and planning/installing/teaching kids in a community veggie & flower garden. I've had friends who've had great experiences with WWOOF, and I plan to give it another look-see. We'll be splitting rent among the family, so it shouldn't be much, but I'm also saving for retirement/college for the young'un, so volunteering would be short-term, which is fine for WWOOF, and could be lots of fun/networking. I'll also definitely check out the hort training program prospects, ag/hort dept profs for tips, and the Maize Improvement Center. Ball Hort also has a production site it works with in Texcoco, so that looks interesting. Also, my father spent a few months on Lake Chapala a couple of years ago, and it's part of our itinerary, so I'll be checking out that forum. Thank you all so much again!
