The more research I do the more nervous I'm getting! I have to feed 8 crew for a month with 10 extra guests on board for 10 or those days later in the month. They like to eat a lot of salads. How is the lettuce, carrots, cucumber, ect... situation?

Nervous !! Impossible a good cook is a creative cook. Look at how the "Caesar" salad was invented with a minimum of ingredients.

Lettuce in Cuba called "lechuga" is quite plain and not robust. Carrots called "zanahorias" are available. Cubans often shred cabbage called "col" and pepinos (cucumber) is readily available . Mangos are a little early now for the season but worth worshipping - they are so divine.
Radishes you can find.

That makes me feel better. In the last 8 months I've been in the Bahamas, Mexico, Peru, Colombia, Brazil, Costa Rica, Panama, and now in Grand Cayman. I'm used to going new places and figuring things out. I know kitchen spanglish, enough to get by. The thing is as a yacht chef you can't fail. And saying "no" or "I'cant" to very rich people is never a good thing if you like your job!!!!!

You will need to set aside a lot of time for this shopping - certainly no one stop shop.
Good advice from Cactus as to locations but a someone who does a lot of cooking in Cuba I can assure you that menus come after you see what ingredients are available not vise versa.

Ask for Mercado de Guajiros or Agromercado. Those folding cart/bags with wheels are useful if you are buying a lot.
