An alternative yet fantastic itinerary could be (if you have a car):

Day 1-4: Havana
Day 5: Drive to Viñales via Carretera Norte - pack some lunch, you won't find anywhere on the road. Arrive in Viñales late afternoon.
Day 6 and 7: Viñales. On your first day you can go hiking, rent some bikes, take a tour - just so much to see and to be honest we thought the scenery was just breathtaking. On day 2 you could go to Cayo Levisa or Jutias for some white sand beautiful beaches.
Day 8: Return to Havana via the highway - you could even stop in Las Terrazas for lunch (fantastic organic restaurant). Sleep in Havana and leave on the next day.

Should you not be able to find a car - you could even just go by bus to Viñales and enjoy the amazing and incredibly scenic town and its surroundings.
