We were planning to go to Honduras over the summer, but rescheduled for the week of Semana Santa and the week after. We plan to go to Roatan the week after Semana Santa, but we'd love to go to a town/towns with a lot of local color and festivities for the week of Semana Santa. Any recommendations? Also, if you know about accomodations, etc. that'd be great. I assume that it will be crowded during the holiday, so we should book in advance.

We spent last year in Comayagua during Semana Santa specifically to view the sawdust carpets that are made in the streets the night of Holy Thursday. You can view the carpets Friday morning before the procession happens that passes over them. Be advised that the bus schedule in Honduras is different during Holy Week and buses run only until about noon on Wednesday, not on Thursday or Friday, and resume on Saturday.
