I've studied about a month total at the Ixbalanque school in Copán Ruinas and recommend it highly. I consider the owners, Kathy and Amadea, to be personal friends so please tell them hi from Stacey if you contact the school. The town is lovely, the ruins inspiring, and there are lots of hiking and cultural options in the mountains surrounding town.
Although La Ceiba isn't my favorite place (I'm not much of a city person) the Central American Spanish School there is excellent. I also enjoyed the area around La Ceiba which is great for outdoor recreation. They have branches on Utila and on Roatán but the islands aren't good immersion environments - just great sub mersion environments. ;-)
