Does anybody know of any organic farms/sustainable living cooperative type places where a person could spend some time (several weeks or months or less) doing work trade? There is only one guatemala listing in the WWOOF database, so I don't want to pay the fee to find out where it is. A similar set up would be great for me. I just need some sunshine, fresh air, moderately physical labor, good people, and opportunity to use my spanish.

I don't know about any in Guatemala, but near in San Cristobal, Chiapas, Mexico, Na Balom runs a nursery and garden that provides tree seedlings for places in Chiapas. It also provides the wholesome food that the place is known for providing to its guests. For example, you can enjoy

I know there are many farms/co ops near xela that take volunteers too. You can try doing an internet search for info. I had a friend who went and lived in a village with locals and picked coffee for a few weeks. Try asking some of the spanish schools in Xela because they oftentimes have info on just what you are looking for.

You can try being a mountain guide in Antigua. They train you. You get paid but have to sign a 6 month contract. It would be an awsome experience.

Check out Atitlan Organics, which is an organic farm and edible plant nursery on Lake Atitlan in Guatemala. It is located in the town of Tzununa, which is between San Marcos and Panajachel.
