I never went fishing but did some research into it, I can tell you this: there are tons of operators in the town of Quepos and boat brokers as well. I would ask all other fishing tourists there opinions at any of the local bars or restaurants in Quepos for rcomendations.

It's low season so you'll have no problem getting a boat!

keep in mind, being low season, that if you are a single and are looking to share a charter, it could be difficult. I spent 5 days in Quepos at the beginning of the month and wasn't able to get out once. Actually, I could have fished everyday if I wanted to pay full price, but $475 was a bit much for me to take on alone. :) You best bet would be to contact some of the guys now, tell them when you will be there and see if something lines up. Everyone is very helpful.
