I will be travelling from Chetumal to San Pedro/Belize by water taxi. I´m now in Mexico and don´t have US Dollars. Can I use Mexican Pesos to pay the boat trip? I tried to change Dollars in Mexico, but it seems that I need so many paperwork! The girl at the bank counter did say somnething about Money laundering law!

I would guess that you could pay in pesos. In fact, the water taxi companies will probably exchange any currency between BZ$, US$ and MX$.
In Mexico, change money at a Money Changer -- it's a very easy process, no paperwork involved. They will exchange BZ$, US$, Euro and MX$
In Chetumal, there are 3 money changers on the main street (Av. Heroes). There are also money changers in Playa and Tulum.
The water taxi companies could probably use pesos for their expenses in Mexico, or easily exchange it.
