I'm starting to look into a trip to the carribean over the Christmas period for this year. We have 2/3 weeks, love nature watching, don't particularly love overly touristy places, like walking, good food a bit of swimming etc. So I had planned to go to dominica as it looks great for nature but am looking for ideas for the rest of the trip.

Does anyone have any suggestions

A good combination with Dominica is doing Guadeloupe - Dominica - Martinique (and St. Lucia if you like) as they are all connected with ferries. Another interesting combination is St. Maarten - Dominica - St. Lucia.
In the end it depends where you are coming from (flight connections!), how much you want to spend on hotels (there are more or less expensive islands) and transfers (ferries vs.flights) and how many islands you want to pack in those 3 weeks.
