I will be arriving at Bole then flying up to Lalibela a few hours later. How's the exchange rate at the airport? Should I change a lot there or wait until I get to Lalibela.

The exchange rate in the airport was very good when I travelled (2012). I got a higher rate at the airport than the banks in Addis.

Do**it at bole. Much quicker. Rates hardlydiffer anywhere inside Eth.

Even if the rate at Bole is "good", it's not a good idea to change too much money in one time.
For security reason, it will be better to change as soon as you need EBR, but step by step.
You can use a mix of $ and/or € but also credit card at some ATM in main cities (not only In Addis)

About the same rates on Bole as in town. Two forex at the airport. You can change while waiting your luggage.

There's also an ATM after customs. If you're flying to Lalibela you have to go through customs and change terminals. Ofcourse it's best not to solely rely on ATMs. We arrived at night when the forex was closed.
