We would like to visit Sahara desert oases near Al Qasr and it seems the best way to do it on our own would be rent a car or motorbike in Luxor and go west by road...
Did anyone tried that? Where did you rent a bike/car? What about prices? What about security issues?

If you are crazy, go by motorbike, martinhanzalek. A car gives you more comfort, the ability to transport more and more security. And going with local transport also has it advantages. To meet/get to know locals.
Okay. This country is not a country where I would would want to bike. Live to ride. Ride to live.
If you should ever make your way to Morocco, bike there.
