Transiting through Cairo on 21 Dec & 6 Jan, and with the current riots, what can I possiblly do over a 9hr layover? .....Giza? Been there, done that. Any other travellers transiting in Cairo on this dates? Any ideas?

I wouldn't worry about it too much now. You've still got a couple weeks until the first layover and a month until the second. A lot can happen between now and then; either way.

If it's feasible when you're there a nine hour layover (really six given airport logistical considerations) is plenty of time to hit a market, grab a nice meal, visit a museum, etc.

Nine hours is not so long, especially considering Cairo's traffic.

You could take a taxi and go to the Khan Al Khalili for lunch at Naguib Mahfouz restaurant + tea and sheesha at the Fishawi cafe, and take a stroll in the souk and along marvellous Al-Muizz street (from Khan al Khalili to Bab El Futuh - do not miss Al Suleymani houses in a tiny alley off that street) and, if time allows, from the opposite side of Khan Al Khalili to Bab Zuweila and the tent makers souk behind. Several monuments can be visited.
