Ron Blaauw ran his two-Michelin-star restaurant in these pared-down, spacious designer premises before turning it into a more affordable 'gastrobar' (still Michelin-starred), whereby you get the quality without the formality or the need to settle down for five courses. He serves around 25 gourmet tapas-style dishes, marrying surprising flavours such as foie gras, raspberry and yoghurt.

It's been such a success that he's opened two more Asian-themed versions across town. The crafting and flavour combinations remain haute-cuisine standard (the new format was recently awarded a Michelin star in its own right), and they are affordable, too.
