Within the Amsterdam American Hotel, this art-nouveau monument, opened in 1902, was a grand café (bar) before the concept even existed. Its huge stained-glass windows overlook Leidseplein; there's a lovely terrace. High teas (2pm to 5pm Monday to Saturday; €29.50) and occasional Sunday jazz brunches are especially atmospheric (book ahead).

It also offers 'ice fondue' (€16 per person; minimum of two), where you dip fruit or chocolate in liquid nitrogen.
