Sudanese food isn't particularly varied – the staples are fuul (stewed broad beans) and ta'amiya, known elsewhere as felafel. Outside the larger towns you'll find little else. That said, the food is generally fresh, tasty and healthy.
Meat dishes include kibda (liver), shish kebabs and shwarma (hunks of chicken or lamb sliced fresh from the classic roasting spit). Along the Nile you can find excellent fresh perch and tilapia.
