The food veers towards the deliciously surreal in concoctions like crispy octopus with kimichi mayo or sage-marinated prawns with frozen salt, followed by sweet-potato sorbet with liquorice and tangerine sponge. The seafood bar serves a variety of oysters, with caviar, borscht and other unusual toppings.
