According to Roland, it was his mum, Mrs Lim, who invented Singapore's iconic chilli crab back in the 1950s. Decades on, Roland has his own giant restaurant, with a chilli crab that lures former prime minister Goh Chok Tong on National Day. The crabs are fleshy and sweet and the gravy milder than many of its competitors: good news if you're not a big spice fan.
Kick start your meal with an order of the delicious steamed golden bean curd – tender bean curd filled with crab and shrimp paste and topped with salted egg yolk. The restaurant is tucked away at the top of a car park.
