This is your chance to sample the many delicious cuisines of the Caucasus. Being a largely Muslim region, there's little pork on the menu, but there's plenty of mutton, chicken and beef, as well as fresh fish (often trout) from the rivers – most often sizzled as shashlyk on skewers (locally called mangal). Vegetarians will love khichiniy flat breads filled with cheese and potato (there's also a minced meat version).
