Lake fish, namely omul and sig, are, expectedly, the main local delicacy. These can be found in smoked and sundried form at markets, such as the one in Listvianka. Restaurants serve them grilled, fried or – most notably – deep-frozen and subsequently half-melted with onion. The resulting dish is called suguday and resembles Peruvian seviche. Other endemic products come from the forest. Definitely try the ubiquitous cowberry and cedar pine nut dessert.
