This is the real deal: a pair of stacked corn tortillas, sizzling meat, cilantro, onion and a squeeze of lime. Look for the trompo (a vertical skewer of slow-cooked pork with a pineapple on top) the heart of the classic taco al pastor. Down it with a Negra Modelo. Perfection.
