The decor at this new venture from Top Chef favorite and restaurateur Sheldon Simeon may be modern and spare, but the hospitality is warm, old-school Hawaiian. The menu spotlights Maui's diverse culinary influences, with Portuguese, Japanese and Native Hawaiian dishes on offer. Appetizers on the 'cart' menu are served dim-sum style, which encourages chatting about ingredients and contributes to an appealingly immersive dining experience.
