The innovative, wonderfully plated contemporary Peruvian creations at Salamanto bolster Arequipa's reputation as a foodie destination. The five-dish degustation is unmissable with mushroom and pistachio mousse, trout carpaccio, and alpaca steak with pisco (Peruvian grape brandy) mustard dazzling on artful slabs of stone. There are only three wines (Argentinian and Peruvian) to choose from but they have been carefully chosen.
If you would prefer to concentrate on one dish, the cuy (guinea pig) here is glazed in pine fungus and passionfruit alongside amaranth and aloe vera. The delicious duck comes with a chicha (fermented corn beer) jelly, hummus and mixed quinoa.
