Stanthorpe's finest restaurant by a country mile, Varias sees student chefs from the adjunct Queensland College of Wine Tourism (QCWT) hone their culinary skills under the watchful eye of professionals. The menu is globally inspired and bistro in style, and while it may not always hit the mark, you can expect flavoursome, seasonal dishes that champion regional produce.

If you're curious about QCWT, local wines and cooking, you can book a 30-minute tour ($10) of the wine college, which also includes a wine-tasting session and 30-minute cooking demonstration. Tours run at 10.30am Thursday to Sunday; bookings recommended.
